Preparation
- Sautee diced onions and garlic until soft
- Peel, dice and boil potatoes
- Mash potatoes
- Boil Mexican Bean mix as per pack instructions
- Mix bean mix, potatoes, onion and garlic and egg yolk. Season with chopped rosemary and black pepper
- Shape into burgers, leave to rest an hour
- Slowly pan fry in very little oil in a non stick frying pan until golden
- Serve in a bun with lettuce red onion and courgettes
