Birds Eye Mexican Bean Salad is delicious, and what's great is that it's so quick and easy to make. Use our Mexican Bean Mix to add a protein packed burst of flavour to your dishes. Made with Love from Birds Eye.

Preparation

  1. Cook Mexican bean mix as per pack instructions
  2. Season bean mix with 2 teapoons of oil, salt and pepper
  3. Dice tomato and red onion. Drizzle with lime juice
  4. Pre-heat remaining olive oil in a frying pan. Dice bread into cubes and fry until crisp to make croutons
  5. Assemble salad, bean mix, tomato and onion, sprinkle over croutons and crumble over goats cheese
  6. Top with chopped coriander, serve and enjoy!
